I add a few teaspoons of raspberries and currants, grated with sugar. I mix another portion of the yogurt with honey and add a few drops of vanilla essence or powdered green tea (matcha).

Mix the ingredients, taste and adjust the amount to your taste. Honey, berries, green tea and any other flavoring additives should be added in such quantities that their taste is a little richer than you are used to - in this case, when chilled, it will taste just right.

Our dessert is almost ready, all that remains is to freeze it. At this stage you can experiment endlessly.

For example, pour yogurt into a pastry bag or syringe, place it on a baking sheet in the form of drops of arbitrary size - you will get very tasty yogurt sweets.

This is not exactly a recipe for frozen yogurt at home, it’s more of a review and life hack - how to make ice cream without knowing how to make ice cream and without having an ice cream maker. Remember frozen bananas? Frozen yogurt is roughly from the same series, only even simpler.

I did a little experiment. I took strawberry yogurt with a fat content of 2.9% and two fattier yogurt products, also strawberry, 5% and 8% fat. I put them in the freezer overnight and got three servings of frozen yogurt. Even the word “cooked” is awkward to write here. Calling this method a “frozen yogurt recipe” doesn’t even work. The only justification for the fact that in the culinary section I tell you how to put a jar of yogurt in the freezer is that I only just now figured out that it can be done. The result is a pretty decent frozen yogurt. If you came up with a good idea yourself, share it with others. My another new motto.

I wanted to compare how different fat content of yogurt would affect the taste and consistency of the frozen product, so I took it based on the fat content that was on the store shelf. The result was unexpected. Now I’ll tell you everything in order.

I put all three jars sealed in the freezer. Everything froze perfectly overnight. I started in descending order of fat content and tried the frozen yogurt product first thing the next morning, 8% fat.

As I expected, it turned out to be the creamiest. It froze into a more or less ice cream-like homogeneous mass.

Right out of the freezer it was, of course, too hard, but if you let it sit for a couple of minutes at room temperature, you get ice cream with a pretty good consistency. And to taste, by the way, too. It looks like real ice cream, it refreshes, cools, and pleasantly pleases.

The second was the yoghurt product Fruttis 5% fat. He turned out to be the fastest of the three. But only in comparison with the other two and for my personal taste.

Frozen perfectly, pink and strawberry.

Unlike the fattier 8% fruttis, the 5% fruttis had ice crystals on top.

In general, it also turned out good. Let sit for a minute at room temperature and you're ready to enjoy.

This yogurt tasted noticeably less creamy and more icy; the consistency was not like ice cream. And it was slightly separated in the jar, creating a creamier layer at the bottom and an icier one on top. However, if I had given it another minute to think at room temperature, it would have been more uniform. In any case, it was worthy. A little less creamy than 8% ice cream, but still quite.

And the last one in my experiment was the lowest fat frozen yogurt. It is yogurt, not a yogurt product. To be honest, I thought that it would be generally so-so because of the low fat content, but it turned out that the problem is not the fat content, but the fact that it is really yogurt, and not a yogurt product. It turned out that this is the trick.

Strawberry yogurt, fat content 2.9%.

From the freezer it looked like it had frozen into ice crystals even worse than five percent fruttis. This impression was deceptive.

I let it stand for a minute at room temperature and it turned out that it was only an icy pattern on the surface, but inside the yogurt was quite homogeneous and yogurt-creamy.

It was even better in taste and consistency than eight percent fruttis. Fruttis still has that flavor of a yogurt product. But real yogurt retains its yogurt taste well after being frozen. The ice cream turned out cold, refreshing, and tasted good. Very similar to strawberry frozen yogurt. Yes, yes, I know, that's exactly what it is, literally strawberry frozen yogurt. I want to say that it doesn’t feel like I froze the strawberry kefir. This is just ice cream made at home without an ice cream maker. Even if it’s from store-bought yogurt.

Verdict: if you don’t have an ice cream maker and if you don’t want to bother with real ice cream, boiling the sweet mass, freezing, stirring, etc., it doesn’t matter! You can take your favorite regular yogurt from the store and freeze it. It won't be any worse. If there is more than one person, you can freeze several yoghurts, for example, three strawberry yoghurts and one plain one, without additives or sugar, then shake the frozen yoghurts out of the jars into a food processor and grind together; to serve, place them in portioned bowls directly from the processor . It will be less sweet and healthier. And the consistency is much closer to the frozen yogurt that is served in cafes. You can blend together, for example, two different strawberry yogurts, the taste will be more interesting, or take strawberry and blueberry. There are as many options as there are different yogurts on store shelves, and even more.

The main benefit of this frozen yogurt ice cream? In portions. With delicious desserts, my saturation sensor usually fails, and I gobble up sweets until I burst. Have you been to Tahiti? They feed us well here too. There is no such problem here. The yogurt was packaged in portions, I ate one - that’s good.

By the way, useful advice in the field of freezing everything that comes to hand: I had guests just now, and we left home for several hours every day in the heat to visit museums and attractions. We, of course, took with us drinking water, first bought several bottles and then reused them by filling the empty bottles with water from the filter. You know me, I'm a big fan of recycling too. The trick was that we filled the bottles with water the night before and put them in the freezer. And then in the morning we took bottles of ice with us. In our heat, the ice melted very quickly, and by the time I started to feel thirsty, there was already water in the bottle. We had cool water with us all day, and it was more pleasant to carry a frozen bottle with us in the heat. Plus, the frozen bottles additionally cooled the air in the car and helped the air conditioning. In short, a useful trick from all sides.

Lately, I very often make myself this ice cream in a matter of minutes. The main thing is to freeze the fruit in advance. These can be peaches, apricots, nectarines, bananas, strawberries, raspberries, etc. But depending on the chosen fruit, you need to adjust the amount of honey.

Grocery list:

  • any fruits or berries, pitted and (optional) peeled - 500 gr.
  • honey - 2-3 tbsp.
  • natural yogurt, such as Greek - 100 gr.
  • lemon juice - 1 tbsp.

Preparation:

  1. Cut the fruit into slices in advance (no need to cut the berries) and freeze for at least 4 hours (or overnight).
  2. Place fruits or berries in a blender, add all other ingredients and blend for 5 minutes until homogeneous mass until all the pieces have dissolved.
  3. Transfer the resulting ice cream into a container and place it in the freezer for 1 hour.
    If you prefer soft ice cream, you can eat it immediately after making it.
  4. If you are serving the ice cream the next day, defrost it for 15 minutes at room temperature.
  5. Spread this ice cream with a spoon after dipping it in hot water.

3. Strawberry yogurt ice cream

Ingredients:

  • strawberries - 140 gr.
  • condensed milk - 200 gr.
  • natural yogurt, such as Greek - 500 gr.

Preparation:

  1. Cut half the strawberries into thin slices, and puree the other half in a blender or immersion mixer.
  2. Thoroughly mix strawberry puree with condensed milk, then add yogurt and mix gently again.
  3. At the end, add the strawberry pieces and transfer the mixture into a plastic or metal mold (it is convenient to use an oblong muffin tin).
  4. Cover the ice cream pan tightly with a lid or cover it with a sheet of parchment and place it in the freezer for several hours or overnight.
  5. Before serving, defrost the ice cream at room temperature for 15-30 minutes and apply with a spoon, first dipping it in hot water.

If you have time, an hour after freezing, you can periodically stir the ice cream with a fork every 30-45 minutes to break up the ice crystals. Repeat mixing 5-6 times. This ice cream will be softer and more elastic.

4. Chocolate ice cream with yogurt

Required Products:

  • dark chocolate - 50 gr.
  • natural yogurt, such as Greek - 500 gr.
  • condensed milk - 200 gr.

Cooking method:

  1. Break the chocolate into pieces and melt in a water bath. When the chocolate turns into a smooth, shiny glaze, remove from heat and leave to cool.
  2. In a separate bowl, mix yogurt with condensed milk and beat with a mixer until fluffy. Its consistency should be approximately the same as yogurt in its original form.
  3. Once the chocolate reaches room temperature, add it to the yogurt cream and stir until smooth.
  4. Leave the ice cream in the refrigerator for 2 hours until it cools completely.
  5. Then we transfer it into a container and, covering it with a lid or a sheet of parchment, leave it to freeze for 4 hours.
  6. An hour after we put the ice cream in the freezer, we take it out and break up the ice crystals with a fork, an immersion blender or a hand mixer. We repeat the procedure every 35-40 minutes 5-6 times.

5. Banana Yogurt Ice Cream

Mix this ice cream with chopped chocolate, top it with caramel and it will be one of the most delicious frozen yogurts you've ever tried!

Required ingredients:

  • bananas, overripe - 3-4 pcs. (total pulp weight 375 g.)
  • natural yogurt, such as Greek - 500 gr.
  • condensed milk - 175 gr.
  • chocolate chips or chopped chocolate - optional
  • - optional

Keep in mind that the riper and even blacker your bananas are, the more flavorful and delicious the ice cream will be.

Preparation:

  1. In a blender, grind peeled bananas, yogurt and condensed milk until a homogeneous puree is formed.
  2. Transfer the mixture into a plastic or metal container and cover with a lid or cover tightly with parchment paper.
  3. Freeze the ice cream in the freezer for several hours or overnight, breaking the ice crystals every 30-45 minutes for the first 3 hours.
  4. At the last stirring, you can add chocolate and caramel, and mix thoroughly again. Caramel can also be poured over the ice cream when serving.

6. Coffee-yoghurt ice cream

For coffee-yogurt ice cream we will need:

  • milk - 240 gr.
  • brown sugar - 110 gr.
  • cocoa powder - 2 tbsp.
  • instant coffee, granules or powder - 2 tbsp.
  • natural yogurt, such as Greek - 400 gr.
  • heavy cream, ≈35% - 110 gr.
  • vanilla extract - 3 tbsp.

You need to add exactly 3 tablespoons of vanilla extract, otherwise the ice cream will taste bitter.

Preparation:

  1. Place milk, sugar, cocoa and coffee in a mixer bowl and beat with a mixer for 2 minutes.
  2. Add yogurt, cream and vanilla extract and continue beating until smooth.
  3. Transfer the ice cream to a plastic container or oblong metal baking dish and place it in the freezer.
  4. After 45 minutes, break the ice crystals using a hand or immersion mixer, or a regular fork.
  5. Return the ice cream to the freezer for another 30-45 minutes and repeat the procedure. And so every half hour for 2-3 hours (the more repetitions the better).
  6. Leave the ice cream for 4 hours or overnight until completely hardened.

7. Strawberry Banana Yogurt Ice Cream Without Sugar

Grocery list:

  • frozen strawberries, peeled and cut in half - 500 gr.
  • frozen banana, peeled and cut into slices - 1 pc.
  • honey - 1 tbsp.
  • natural yogurt - 100 gr.

Preparation:

  1. Place all ingredients in a blender and blend until smooth, about 5 minutes.
